The method of obtaining Rye flour

The type of flour, what is it and what is it used for? Remember that the higher the index next to the name of the flour, the greater the content of nutrients, fiber, minerals and the content of bran. The number indicating the type of flour is determined on the basis of the mineral content, resulting from the amount of ash formed after the flour was burned at 900 degrees.
Flour type 720 is a flour obtained from disposable grinding of grains, without sifting, so it contains the most valuable grain components. It is extremely tasty, it can be mixed with other types.
Recipe for sourdough
Combine the rye flour with lukewarm water in 100g per 100ml, preferably in a glass jar (jar, or any other dish suitable for covering). The ingredients should be thoroughly mixed with a wooden spoon or other wooden cutlery to obtain a thick consistency, then cover the dish with a linen cloth and leave for 12 hours in a warm place.
After 12 hours, the sourdough should be mixed again and discontinued for 12 hours. After this time, add 50g of rye flour and 50ml of lukewarm water to the dish, mix again with a wooden spoon and put in a warm place for the night, this time the leaven for bread is left for 24 hours.
The fermentation of leaven should start on the third day. You have to check if it smells acid, if it does not mean that everything is fine. Then add another 50g of rye flour and 50ml of lukewarm water, mix, cover with a cloth and leave in a warm place for 12 hours.
Again mix the sourdough, cover and leave for 12 hours. After this time, again add 50g of rye flour and 50ml of lukewarm water, mix, cover and leave.
On the fifth day the sourdough should be ready, the consistency should be thick and there will be numerous air bubbles on the surface. Carefully mix sourdough, cover and leave for several hours. After this time, the sourdough will be ready to bake bread.
